The Vinegar Workshop is hidden within the Chishan General’s Residence. Stepping into the building, filled with a strong sense of history, you will feel like walking into a food museum. The restaurant showcases the Lingnan architectural style, with every brick, tile, and window preserving traces of the old times.

At the Lishui Fragrant Rice Vinegar Culture Experience Center, you can learn about the cultural history of fragrant rice vinegar, discover the ingredients, and understand its production process.
Making “Fragrant Rice Vinegar” takes 3 months, from a grain of glutinous rice to a drop of original vinegar. The process includes 8 steps: selecting, baking, seeking, making, soaking, fermenting, waiting, and aging. Each batch of new vinegar undergoes at least 3 months of aging, completing a process of “summer sun-drying, winter ice-pulling” for concentration, which results in the authentic fragrant rice vinegar that has been passed down for a century in Foshan.
This vinegar undergoes enzymatic (fermentation) and has no unpleasant smell. On the contrary, it has a rich, mellow flavor with a hint of alcohol taste, but without the alcohol content. It’s the amino acid flavor naturally emitted during grain fermentation, which can accelerate metabolism and is suitable for all ages. Once tasted, it will leave you craving for more!
At the same time, Chishan Vinegar Workshop brews different fragrant rice vinegars based on the climate of Guangdong, using different ingredients for each season. In spring, they use mugwort and goji berries to warm the body and invigorate the spleen; in summer, lotus seeds and water chestnuts to nourish the heart and calm the mind; in autumn, grapes and pomelos to regulate digestion; and in winter, various grains to nourish and strengthen the stomach.
In the ancient and charming General’s Residence, many of the dishes at Vinegar Workshop follow traditional preparation methods, with sincere attention to every step from ingredient selection to processing. The signature dishes, “Fragrant Rice Vinegar” and “Five Vinegar Treasures” are must-try items.
(1) Signature Fragrant Rice Vinegar: The soup base is made with fragrant rice vinegar, and ingredients like chicken, pig trotters, and sweet potatoes are added. The mild acidity of the vinegar perfectly balances the richness of the meat. The intense vinegar aroma instantly whets the appetite, and the sweet and sour flavor lingers on the tongue. The pig trotters are tender, the chicken is fresh, and the sweet potatoes are soft and delicate. This dish offers a variety of rich textures, and even the pickiest eaters will love it!
(2) Vinegar-Marinated Sausage and Meat Rice: The preserved meats, including Chinese sausage and cured pork, have a rich salty fragrance and unique smoky flavor. The rice blends the acidity of the vinegar with the saltiness of the preserved meats, creating a distinctive and delicious taste that’s rich in nutrients and easy to digest.
(3) Vinegar-Cooked Goose: The goose is cooked in a rich sauce made with fragrant rice vinegar, absorbing the flavors well. A bite bursts with juicy goodness, with a perfect balance of sour and sweet, without being greasy.
(4) Vinegar-Marinated Meatballs: The meatballs are made with water chestnut pieces, offering a juicy, tender bite. The tangy vinegar and sweet sugar flavors intertwine on the palate, creating a rich and complex taste.
